Discover the traditional process behind Cretan raki and learn how this unique distillate is created. Every autumn, after the harvest, grapes are pressed and left to ferment. A portion of the fresh must is stored in wooden barrels for wine production, while the rest of the must, along with the grape pomace, is led to the copper kazani, where it is slowly distilled over a wood fire. You will watch us milk our goat and participate in making tyrozouli, a fresh, soft Cretan cheese with a mild, salty taste. You will taste the warm milk and fresh cheese right as they are made, a flavor that for most is the freshest they have ever experienced. You will also visit the stone mitato and learn how its natural construction maintains the ideal temperature and humidity conditions for traditional cheese-making.
